This sparkling wine from Félix Solís comes from Castilla-La Mancha and is made from Airén and Viura. It is not a cava: it starts from a white wine to which just the right amount of carbon dioxide is added. It is 10.5% vol., pale yellow in colour with fine bubbles; the nose shows toasty notes, white fruit and fresh grass, while the palate offers citrus fruit and good acidity. It won a gold medal at the 2019 Sommelier Wine Awards. Serve between 6 and 9 °C with cheeses, salted fish or Asian cuisine.
