It is made from the free-run must of Listán Blanco and other grape varieties, which is partially fermented at 15 °C; fermentation is then stopped by chilling to retain some of the natural sugar. The result is a white of 11.5% vol., pale yellow with steely glints, with aromas of passion fruit, aniseed and freshly cut grass, and a fresh, fruity palate. It won first prize for semi-sweet whites at the Manuel Grillo Oliva competition. Excellent with Asian and Italian cuisine and salads.
